C\u2019est une <strong>technologie innovante<\/strong> dans ce domaine d\u2019application sp\u00e9cifique, qui vise \u00e0 <strong>augmenter la conservation des produits avec une excellente fiabilit\u00e9<\/strong>, en r\u00e9duisant les co\u00fbts de logistique et de stockage. Le processus de pasteurisation cr\u00e9e un <strong>produit propre, sans conservateurs ni additifs particuliers ajout\u00e9s<\/strong> aux produits eux-m\u00eames. L\u2019\u00e9tude vise donc \u00e0 la <strong>r\u00e9alisation de fours \u00e0 tunnel industriels ou semi-industriels <\/strong>\u00e0 ins\u00e9rer dans un processus ou un contexte productif.<\/p>\n\n\n\n<p>Les <strong>tests <\/strong>effectu\u00e9s jusqu\u2019\u00e0 pr\u00e9sent sur la <strong>baguette <\/strong>et le <strong>pain de mie<\/strong> ont donn\u00e9 d\u2019excellents r\u00e9sultats. Au cours des prochains mois suivront des <strong>tests de fiabilit\u00e9 et de stabilit\u00e9 des r\u00e9sultats organoleptiques<\/strong> des produits pour une phase ult\u00e9rieure de <strong>proposition sur le march\u00e9<\/strong> des fours \u00e0 tunnel pour la pasteurisation.<\/p>\n\n\n\n<p>Beaucoup de projets d\u00e9velopp\u00e9s par Ars Pan Industriale s\u2019adressent et sont d\u00e9velopp\u00e9s pour des clients producteurs de <strong>produits surgel\u00e9s<\/strong> (pain, pizza, bases pour pizza, hamburgers, etc\u2026) ou de <strong>produits \u00e0 longue conservation en atmosph\u00e8re modifi\u00e9e<\/strong> (pain de mie, fougasses, bases pour pizza, etc\u2026).<\/p>\n\n\n\n<p>Les deux syst\u00e8mes (production surg\u00e9l\u00e9e et production en atmoph\u00e8re modifi\u00e9e) ont leurs <strong>avantages <\/strong>et <strong>inconv\u00e9nients<\/strong>.<\/p>\n\n\n\n<p>Une des <strong>limites <\/strong>de la <strong>surg\u00e9lation <\/strong>est, en effet, le maintien de la cha\u00eene du froid des produits, \u00e0 partir de la fin de leur production jusqu\u2019\u00e0 leur consommation (stockage \u00e0 la production, logistique d\u2019exp\u00e9dition et stockage au point de vente) qui implique un besoin <strong>d\u2019espace et d\u2019investissements consid\u00e9rables<\/strong>.<\/p>\n\n\n\n<p>Par contre, en ce qui concerne <strong>la conservation li\u00e9e \u00e0 l\u2019atmosph\u00e8re modifi\u00e9e et \u00e0 l\u2019utilisation de l&rsquo;alcool<\/strong>, il s\u2019agit d\u2019une solution qui ne n\u00e9cessite pas de stockage et\/ou de logistique particuliers\u00a0: cela implique donc moins d\u2019investissements, mais il y a <strong>moins de fiabilit\u00e9 li\u00e9e \u00e0 la dur\u00e9e de conservation <\/strong>du produit et <strong>plus de p\u00e9rissabilit\u00e9<\/strong> au niveau organoleptique (risque de s\u00e9cheresse, moisissures et odeur excessive d\u2019alcool).<\/p>\n\n\n\n<p>Nous
